Sparkling Chardonnay.

The wine is brilliant with a fine and persistent natural effervescence. The colour is medium straw with a light green hue. An intense bouquet of white peach Chardonnay fruit is enhanced by a subtle yeastiness. The palate has full flavoured Chardonnay fruit, yet retains the finesse of a premium quality sparkling wine. Lively persistence of flavour with crisp natural acid leads to a clean dry finish.

Winemakers Comments

Chardonnay fruit is allowed to ripen to 10.5 to 11.0 Baume to allow flavour development. This fruit is machine harvested in the cool of night to preserve fruit flavours. Only free run juice is used to ensure an elegance of style. A cool and slow primary fermentation enhances the bright fruit characters. The secondary fermentation of the blend produces the natural effervescence and an additional light yeast character.
